Farmstead, blue-veined sheep milk cheese made in the lower St. Lawrence region. Its natural rind varies in colour while the supple ivory paste is interspersed with a greyish blue veining. Depending on its age, its main notes are very typical of blue-veined cheese, going from vegetal to tangy.
