Steeped in the family farming tradition, dating back to their great grand father, Marie-Chantal and Jean-Paul Houde, brother and sister in their twenties, started the Bergerie (sheep farm) and the Fromagerie Nouvelle France.
Jean-Paul looks after the sheep farm which extends over 250 acres located at the beginning of the village of Racine in the Eastern Townships. From Route 243, following the valley, the herd of 275 East Friesan sheep can be seen quietly grazing in their pastures on the hillside.
Marie-Chantal is the cheesemaker of the family. Her approach to cheesemaking is a careful balance of tradition and modernity. "Dairy science has evolved, agricultural and environmental science too. I take the best that science has to offer, I add my intuition, my creativity, my competence, my experience and I forge ahead!"
Her studies and her experience have led this young cheesemaker to be recognized by her peers as a worthy consultant. Today, her knowledge and experience are expressed through her very own creation: The Zacharie Cloutier, a tribute to the Cloutier-Houde family ancestor.
