Cheese with a taste of the seaside!
We can safely say of our artisan cheesemaker, Christian Paturel, that his patience and perseverance have served him well. In 2013, after dreaming of this great adventure for over 20 years, Christian finally embarks upon the journey of making his very own artisanal cheese.
It is at Sainte-Luce-sur-Mer, a picturesque village in the Bas-st-Laurent region, that he buys an old fromagerie.
With a desire to promote local produce and in respect of its ecological production, he chose to work with organic milk and to obtain his certification. He sources his organic milk, salted herbs and mead locally.
Ferme Géracine, St-Damase, Gaspésie
The proud suppliers of the fromagerie's organic milk are located at St-Damase in the Matapedia Valley, the most important region in Quebec for organic milk production.
The well-being of the animals is a priority and the cows must go out to pasture at least 180 days in the year. The farm obtained its organic certification in 2005.
