Made from organic cow's milk, Tomme des Collines is aged for two to three months. Its naturally dark rind is slightly bloomy, and its texture exudes a slight fruity flavor. The cow's milk comes from a local herd where the cows graze freely on the Appalachian hills. Their well being is reflected in the milk’s quality.
