Art and science come together in the name of cheese.
In 2010, steeped in the farming tradition inherited from their great grandfather, Jean-Paul and Marie-Chantal Houde, brother and sister in their twenties, decide to become associates to create the Nouvelle France sheep farm and fromagerie.
The Fromagerie du Presbytère was very supportive and facilitated the start-up of their venture. Today, Fromagerie Nouvelle France is fully operating in Racine, in the Eastern Townships.
Marie-Chantal's wish is to allow Quebeckers to discover and appreciate cheese made from sheep's milk. Her creations are modern yet still respect the traditions of cheesemaking. Her artistic and scientific mind could not have found a better medium to express itself.
Bergerie Nouvelle France
Jean-Paul is part of the fourth generation of farmers in his family. His knowledge of the fields, grains, soil and harvesting he owes to his grandfather. His father taught him animal husbandry, to love and care for the animals and, of course, how to milk them.
The sheep farm consists of 250 acres and is located at the entrance of the village of Racine in the Eastern Townships. From the valley, along Route 243, you can see the flock gently grazing on the hillside.
The Solidar sheep farms in Chicoutimi and the sheep farm Fou du Berger in Hatley also supply milk to the fromagerie.
