Made from unpasteurized sheep milk, this semi-soft paste with a washed rind is ripened for over 2 months. It is distinguished by its rind with arrowed relief, a supple texture and sweet lactic and floral aromas.
The name was chosen to honor the team of hard working sheppards who provide the milk for Fromagerie Nouvelle France.
