Made from A2 Jersey cow milk, this cute tomette is covered with a thin saffron yellow rind on which a light white veil develops. The paste with its scattered small openings is smooth, unctuous and tastes like cream enhanced by animal notes emanating from the rind.
Prior to being renamed Jersey in 1879, the breed was known as Alderney; the given name to this beautiful cheese.
A2 milk is the result of a traditional genetic cow selection and not resulting from a genetic modification. Some researches tend to show that people who are lactose intolerant find A2 milk easier to digest.
