The Chemin Hatley Grand Cru, aged 10 to 16 months, is characterized by floral and fruity notes giving it an intense and longer lasting flavor. This organic farmstead cheese has a pressed, semi-cooked firm paste with an ochre-colored rind that exudes a delicate woodsy aroma. 

The Hatley Road  gets its name from the road that was used by the stage-coaches traveling between Quebec City and Boston. The farm and cheese factory are located along this road.
