Born from the work of two passionnate cheesemakers, this big wheel of 40kg is made with an equal blend of raw sheep and cow milk, coming from the cheesemakers own herds.
After ripening for 10 to 12 months, The Pionnier exhudes complex aromas of butter, brown sugar and macadamia nuts topped with a delicate floral note reminding us of the beaufort d’alpage.
This cheese, made in very small quantities, is sold in a few selected cheese shops and at the Fromagerie du Presbytère in Ste-Elizabeth-de-Warwick.
