Aged for a minimum of three months with salted herbs from the Bas du Fleuve region, Le Coq de l'Anse is an organic, cooked firm paste cheese. The delicious mix of dried herbs gives this cheese a taste that is distinctive of its region and can cause the rind to take on a green khaki colour. The name is derived from a small bay called l'Anse-aux-Coques at Sainte-Luce-sur-Mer.
