According to the definition of this expression, the «lunatique» has a complex and contrasted personality. Are we describing here the cheese or the cheesemaker? Maybe a little bit of both.
The Lunatique is certified organic by Quebec Vrai. It’s made of thermalized Jersey cow’s milk. Washed with pear mead from the same region, the rind has a slightly ocre pinkish color with a velvety finish that exudes aromas of fresh hay. The paste is onctuous and supple with sweet fruity notes.
