This goat milk farmstead crottin is ripened for 14 days. Its paste is dense, yet silky and covered with a thin bloomy rind. When maturing, the crottin dries and gradually gets covered with tiny blue flowers.

When young, its taste is fresh, lactic and caprine. As it ages, the taste is more intense and spicier. It’s excellent, cooked or cold.

The name Fanny comes from Stephanie, the cheesemaker’s wife.
