Casimir is a “Camembert” type, soft cheese with a bloomy rind. The name Casimir was chosen in honour of the family’s grandfather who settled along the banks of the “rivière du Lièvre” at the beginning of the century. He supplied a small cheese dairy located on the farm with the milk from his herd.
